At Nuovo York Pizza, every pie tells a story about the city it comes from. Long before we opened our doors here in the East Village, we wanted our menu to feel like a map of Manhattan — not just a list of toppings. That's how our neighborhood series was born: three signature pizzas, each named after a square that shapes the character of downtown New York. Here's the story behind each one.

Washington Square Pizza

Washington Square Park is one of the most iconic gathering spots in New York City — the arch, the fountain, the constant hum of NYU students and street musicians just a short walk from our kitchen on E 9th St. Our Washington Square Pizza is a tribute to that classic New York energy: a rich tomato sauce base, mozzarella and pecorino romano melted together, and finished with a generous layer of pepperoni. It's the pie we'd hand to anyone who wants the most traditional New York slice experience, made with the precision we bring to every pizza here.

Union Square Pizza

A bit further uptown, Union Square has always been a crossroads — of neighborhoods, subway lines, and now, pizza styles. Our Union Square Pizza is our take on a classic Margherizta, built with mozzarella, fresh mozzarella, plum tomatoes, and romano. No shortcuts, no fillers — just the layered dairy and bright acidity that a real Margherita depends on. It's simple in theory and genuinely difficult to get right, which is exactly why we treat it as one of our signature pies rather than an afterthought on the menu.

Cooper Square Pizza

Cooper Square sits right at the edge of our own neighborhood — the point where the East Village, NoHo, and the Bowery meet near Astor Place. It felt right to name our white pizza after it. The Cooper Square Pizza skips the tomato sauce entirely, built instead on a base of mozzarella, ricotta, and pecorino romano for a creamier, richer bite. If you've never tried a white pizza before, this is the one we'd point you to first.

Why We Named Our Pizzas After NYC Squares

Every one of these squares is within a few blocks of our door here at 105 E 9th St. Naming our pizzas after them wasn't just a branding choice — it's a reminder that Nuovo York Pizza is built for this neighborhood, by someone who lives in it. We ferment our dough over 72 hours for that classic New York style crust, and we think the least we can do is name our pies after the places that make this part of Manhattan worth showing up for.
