East Village corner slice shops make a lot of claims. At Nuovo York Pizza, we approached the question differently, because our founder didn't come up through pizza kitchens. He came up through a chemistry lab.

Why We Measure What Most Kitchens Guess

Ask around for the best New York pizza and you'll hear a lot about "secret recipes." We don't have one. What we have is a sauce we test for pH on every batch, because a half-point swing in acidity changes how the tomato reads on the tongue — brighter, flatter, sharper — long before anyone can put a finger on why. We measure viscosity too, batch by batch, because a sauce that's too thin soaks into the crust before it ever hits the oven, and one that's too thick sits like paste instead of coating each bite evenly.

Washington Square — a pepperoni built for people who want the classic done right: cupped edges, a little grease pooling in the center where it belongs.

Union Square — our margherita, simple on purpose: San Marzano-style tomato, fresh mozzarella, basil torn (not cut) right before it goes out.

Cooper Square — a white pie, ricotta and mozzarella with garlic and olive oil doing the work tomato usually does.

Open Late, By Design

East Village doesn't stop at 10pm, and neither do we. Counter service, no reservations, doors open until 3AM Sunday through Thursday and 4:30AM Friday and Saturday — built for the after-work crowd and the after-everything-else crowd alike.
